Fish roll is one of the regular snack made in West Africa. Personally I don’t like fish roll because of its aroma and is kinda not that soft it’s hard to chew. But you know Nigeria mum with the ways of forcing kids to eat what they offer, I was forced to like it by fish by force 😁 because mum love it and there is a saying ( one man’s food is another man’s poison). Mum love it.
Here are the ingredients we are going to be needing for making the fish roll.
- Medium onion- chopped
- Nutmeg – ½ teaspoon
- Egg – 1
- Baking powder – 1½ teaspoon
- Pepper to taste
- Flour – 3 cups
- Salt – ½ tsp
- Sugar 1½ tbs ( you can add more)
- Butter – 3 table spoon
- Water – ¾ cup or you can also use milk
- Vegetable oil – for frying.
Procedure for making fish roll
Fish: cut and wash your fish into desired size put it in a pot and add your chopped onions, Curry, thyme, ginger, garlic, salt and seasoning cube to taste, boil it for five to six minutes.
Now drain the water used to boil it and let it cool completely, after you are sure that it won’t burn your hand at all, remove the bone, mashed it and set aside.

For the dough making.
Sieve all the dry ingredients together, flour, baking powder, sugar, salt.
Mix the ingredients together, then add butter and mix well until it is like bread crumbs.
Now at your egg mix and add water, make sure you add the water little by little so as not to end up having a running dough. Mix together to get a smooth dough for about 7 minutes and leave it to rest for 10 to 15 minutes.
Fry your chopped onion with little vegetable oil for a minutes add your mashed fish, pepper to taste, this procedure should take up to 2 minutes and the oil should be moderate so that you won’t end up eating plenty oil. When you are done frying, set it aside.

Now transfer the dough into a work surface take your dough and knead it again for 2 minutes cut it into 10 pieces and use your rolling pin to make it flat and smooth.
For the wrapping
Spread the court go on a smooth surface and roll with rolling pin on till its flat., Put some sauce into the dough and gently roll it and wrap.
Put some amount of oil into the frying pan allow it to eat up gently place your roll dough into the oil and reduce the heat so it won’t burn and for it to cook evenly. and Stir and fry until it turns Golden Brown.
Note: you can use self-rising flour if you don’t have plain flour
Do not use more than one tablespoon of baking powder because it will become too crunchy.
To secure the tips of the dough used small water at the tip so it will close well and prevent it from spilling into the oil.
Use paper towel to remove excess oil from your fish roll.
Your fish roll is ready.
