I have tasted different types of rice like Jollof rice, coconut rice, white rice e.t.c but I am going to be telling you how to prepare your fried rice with sausage.
Fried rice on it own have these unique taste, that’s why a lot of people love to eat it but adding sausage to it add alot of great taste and aroma.
Fried rice is like a twin to jollof rice, fried rice is one of the meal we prepare during occasions like Birthdays, Naming ceremony, Wedding, funeral, Anniversary e.t.c.
To me preparing fried rice is very easy but the only work that people are trying to avoid is cutting of veggies but now is very easy, you can get your already chopped mixed veggies in mall but for me,fresh veggies taste great so doing the cutting is like fun anyways.
Fried rice needs some excort 😃(veggies) like carrot, green bean, green peas, green pepper, Red pepper and so on depending on how you want your fried rice to look.
Some of us that are new to preparing fried rice will be wondering why the color is always different compare to other rice, is because of the spice added to it.
There are lot of fried rice spice in the market so when you go to store just select one that you will love to use.

Fried Rice prepare with chicken stock give a perfect color compare to beef stock because beef stock can change the look of your rice.
We have different method of cooking fried rice, some love to parboiled the rice first then later add fried veggies, or other way round but they all taste supper great.
The ingredients we are going to be using for our rice:
- 2 cups of long grain rice
- 1 teaspoon of curry powder
- 3 tablespoonful of vegetables oil for frying
- Salt to taste
- 1teaspoon of black pepper
- I cup of chopped beef (optional)
- ½ cup of chicken stock
- 2 seasoning cubes
For the veggies
- ½ cup of green peas
- 2 medium sized carrot (chopped)
- 1 red pepper (diced)
- 4 sausage (sliced)
- 1 medium onion (chopped)
- 1 green pepper (diced)
- Sweet corn

Before you forget parboil your rice to remove some starch from it and more so parboiled rice works well for Fried rice but do not over boil it.
How to prepare
Clean your chicken, put inside pot and add curry,thyme, seasoning cubes, chopped onion, grate small amount of garlic and salt to taste. Add some water and cover, cooked until it’s done.
Separate the chicken stock from the chicken using a strainer to remove any particles in the stock. If you want to fry your chicken at this point you can do so and if you are using liver fry it with your chicken. Then fry your sausage as well.
Wash all your vegetables, peel your carrot and chopped it with the help of chopping board and knife. Chopped fried liver ( but I will be using chopped beef as substitute) chopped green and red pepper. Make sure you remove the seed to give it a perfect shape.
Put your cooking pot on fire, Add your chicken stock, seasoning cubes, and pour in your parboiled rice, allow to cook, if you need to make your rice more colorful add ½ teaspoon of curry or Jollof rice spicy, it works pretty well. Covered and cook till the water dried up.
Put your frying pan on medium heat, add 3tbs of vegetable oil, allow the oil to heat up then add your chopped onion and stir for 75sec.
Add your sausage and stir for about 3minutes, add mixed veggies and seasonings (curry, black pepper, garlic powder, seasoning cube) stir everything together.
Now divide your rice and veggies into two so that you can fry it in batches. But if your frying is big enough you can do it once.
Pour already cooked rice into the veggies and mix it up, stir fry for like two minutes, if you are doing it in batches repeat the process for the remaining batch.
Your fried rice is ready HOT HOT.
Do not over cooked your rice because your don’t wanna messed your work up.
You can always add more veggies.
You can still prepare your fried rice without parboiling your rice.
If you are preparing for more than 3 people you can double the ingredients.
The more curry you add the darker your rice color turns.
