Melon Stew is a little bit different from the regular melon with vegetable soup and also how to prepare melon stew is not the same with egusi ijebu because is melon Stew we are going to be using frying process without adding water.
Egusi is one of the popular west Africa soup, both young and old enjoyed this soup expecially when taken with swallow e.g Amala, Pounded yam, semo, Eba e.t.c
Egusi seed are very rich in protein and also fat.
The common African Egusi soup do have extra veggies inside, if not plenty but will still one or two different veggies like pumpkin leaf, green etc. They all taste great depending on how you want your own to be prepared.
They are some recipes that require fresh fish and some anything goes. Some prepare their melon soup without oil.
I love to add some eatable leave why cooking my melon soup but not always, sometimes I love the taste of my melon without adding extra veggies to it.
My today recipe is a little bit different from Egusi Ijebusoup, Egusi Ijebi is a little bit light and is more like gbegiri buy my own melon stew is kinda thick. And oily.
Egusi stew can be enjoyed with boiled yam, white rice, etc.

Ingredient for Melon Stew
- 2 cups of grounded melon
- 1 medium onion (chopped)
- 4 cloves of garlic (chopped)
- 3 large tomatoes (chopped)
- 1 small ginger (chopped)
- 3 habanero pepper
- 3cubes seasoning
- 1 cup of Red oil
- 1 teaspoon of salt or as desired
- Beef ( can also use chicken)
- 2 tsp of crayfish

How to prepare Egusi Stew
Arrange all your ingredients down to avoid looking up and down for it when needed.
Clean your tomatoes, pepper, onion, garlic, Ginger.
Chopped your pepper, garlic, onion ginger or you can also use hand blender because we don’t want it to be too smooth.
Chopped your tomatoes into smaller pieces, and put a clean pot on a medium heat add a cup of palm oil (you can also use vegetable oil) let it heat up for then pour your chopped tomatoes stir for 70 seconds add your blended pepper allow to fry stir and pour the grounded melon inside it stir and allow to cook for 2minutes add the seasoning, salt and your already boiled beef with little beef stock, stir everything together and allow to cook on a low heat for 5-7 minutes. Then add your grounded crayfish and stir.
Your Melon Stew (Egusi) is ready.
You can use chicken goat meat or fish instead of beef (I use both beef and goat meat).
You can add extra pepper if you want your stew to be spicy.
Vegetable oil can be substitute for Palm oil.
Pick the dirt from your Melon before blending it.
Use your stock instead of water.
