Nigerian Pancake Is a little bit different from the regular pancake seeing everywhere, it’s alittle spices, denser and the aroma is so great.
- 2cups of all purpose flour
- 1/2 medium onion
- 2 teaspoons of baking powder
- 2 tablespoon of sugar
- One big bonnet pepper
- 2 large eggs
- 1 Tin of evaporated milk
- 2 tablespoon of melted butter or vegetable oil ( more for cooking)
- Vanilla extract
How to prepare Nigerian Pancake
In a medium clean bow, add all your dry ingredients (all purpose flour, sugar,salt and baking powder) mix together and set aside, in another another bow break in your eggs then add your milk and vanilla extract whisk together, cut your onion and pepper to smaller sizes and pour it in your egg mixture and mix it together.
Now slowly pour the mixture into your dry ingredients and mix everything together making a liquid but not too watery batter.
Light up your cooking gas and put your clean pan on it, pour in some amount of oil and allow it to heat up then put small batter in and fry for 1 minute on a low heat, flip to the other side for another 1 minute. Repeat the same process till you are done frying all the batter.
Yummy your Nigerian pancake is ready. Top with honey or powdered sugar. Serve with beverage to wash it down.
