Nigerian Doughnut can be made in two different ways which are baked and fried doughnut.
Baked donut always required baking powder while fried doughnut need yeast.
So on this topic we going to be taking about fried donut.

Perfect doughnut receipe are;
Ingredients for Nigerian Donut
- 500 gram of Flour
- 120 grams of sugar
- 1 cup of water
- A big egg
- 1tablespoon of yeast
- 50 gram of butter
- 1 tsp of Nutmeg
In a small bowl, measure your yeast in add small enough of warm water and set aside for 5-7mins in a warm place.
This the process in to proof your yeast if it’s still active.
So after leaving it to prove for 7mins and the yeast didn’t show any bubbles on the surface, quickly abort the mission because without the active yeast the doughnut will not rise.
So instead of going ahead with the inactive yeast save your ingredient till you get good and active yeast.
In a mixing bowl add your active mixed yeast, add nutmeg and break in your egg.
Take your butter and add bit by bit, add in your sugar and finally add your flour gradually.
Mix as you are adding it.
Mix with your turning stick but if you have mixer you can use it.
When using mixer set at low speed to bring together all the ingredients.
Mix for a while then increase it to medium, allow to mix well till no flour is seen on the side of the bowl.
Mixing with mixer should last for about 10 -12 minutes, while using turning stick should last for 20- 25minutes untill you get that perfect smooth dough.
After mixing well enough and noticed that the surface of the dough is smooth and ready to make look, because the look must be different from when you start the mixing process.
Pour your dough on a surface and knead for 7minutes, the dough should be soft but not too soft so that it will help the rolling out process.
Put small amount of oil inside a bowl and transfer the dough inside.
Cover with kitchen towel and keep for 40 minutes for it to double in size.
Transfer dough to a lightly floured surface and knead for 5 minutes to remove some air. Knead till it gets stretchy.
Put some flour on your hand, gently roll the dough out on a smooth surface with help of rolling pin, to get a fine smooth dough.
Roll to 2cm thick to get firm donut.
After cutting place the cut dough on a greased tray and leave it to raise for another 15mins or more.

Put your frypan or can also use pot, put it on fire and pour in your oil, allow it to heat up.
When the oil is hot enough put your cut dough in it one after the other, it must float on the surface, fry till it turns golden brown.
Remove the doughnut with perforated spoon and place on a paper towel to remove excess oil.
If you do not have paper towel use your colander.
Sprinkle some sugar on it.
